We’re so happy to welcome Yukro back to the menu here at Heart for the eighth year! This is one of our longest continued relationships and this harvest doesn’t disappoint. If you’ve been a fan of this coffee in the past you’ll recognize it’s florality and juiciness straight away.
Yukro is part of the now famous Kata Muduga Union network in Agaro. Paired with Nano Challa and Duromina, Yukro is now a darling of quality Ethiopian coffee in specialty circles. These sister cooperatives have consistently put out some of the best coffee in western Ethiopia. As the reputation has grown the coffee has only gotten better year over year.
The coffee is delivered to the cooperative and immediately processed with a depulper before being fermented for 12 hours. The mucilage is then removed mechanically before the coffee is put on raised beds for a brief period in the early morning to ease the drying process. The coffee is then dried for 6-7 days in typical fashion; early day and late afternoon full sun and being covered during the hottest parts of the day.
